Yields: 7 cups (1 cup = 1 serving)
Ingredients:
- 3/4lbs of tomatoes (2 cups chopped)
- 1 3/4lb honeydew melon (2 cups diced)
- 1 3/4lb cantaloupe (2 cups diced)
- 1 3/4lb watermelon (2 cups finely diced)
- 1 medium mango (1 cup diced)
- 1 seeded peeled medium cucumber (1 cup diced)
- 3 medium nectarines (1 cup diced)
- 4 oranges for 1 cup fresh orange juice
- 1 medium sweet onion (1/2 cup finely chopped)
- fresh basil (1/4 cup chopped)
- fresh mint (3 tablespoons chopped)
- fresh lemon juice (3 tablespoons)
- all-natural cane sugar (1 teaspoon)
- salt (1/2 teaspoon)
Optional Ingredients:
- 1 jalapeño pepper, seeded and finely chopped
- coconut water (a splash-1 tablespoon)
Directions
- Blend all ingredients in a blender or food processor to desired consistency. Transfer to a large bowl and cover. Chill for at least two hours.
