Ingredients:
3 cups fresh spinach
1 cup strawberries, halved
1/2 cup blueberries
1 peach, cut into wedges
1 Red onion, sliced
1/4 cup walnuts, chopped
1/4 cup feta cheese, crumbled
For the Vinaigrette
1 cup olive oil
1 tablespoon Dijon mustard
Directions:
- In a medium bowl, add the spinach, strawberries, blueberries, peach, and red onion.
- Toss to combine.
- In a small bowl, whisk together mustard, honey and vinegar. Slowly add the olive oil while whisking. Season with salt and pepper.
- Right before serving, gently toss dressing with salad ingredients to coat evenly. Top with walnuts and feta!
